Lori Stahlbrand is a professor at George Brown College. Debbie Field is coordinator for the Coalition for Healthy School Food. Both are deeply concerned about the sustainability of food security. They believe that food should mostly be produced locally, and with reference to the indigenous knowledge of people who have lived in the region for centuries and know the conditions of the soil and ecosystem.
